THE ART OF BLENDING

Like a perfumer before his olfactory piano, the art of blending wines is undoubtedly a discipline that requires rigour, experience and know-how. The quest for perfect harmony in each cuvée, inspired by the diversity of terroirs, plots, vintages and winemaking styles, requires talent and patience worthy of the greatest artisans.

The production of Fiole wines begins with a meticulous selection of plots, with each vineyard being scrutinised for its unique characteristics and its potential to contribute to the final blend. This initial stage is crucial, as it lays the foundations on which the excellence of the wines is based.

AGEING

Then comes the time of ageing, a period during which the wines are monitored with scrupulous attention. Tasting, adjusting, ageing, these actions repeated with precision and care are the tools by which the Cellar Master manages to maintain the consistency and uniqueness of the character of the wines over decades.

In particular, the Fiole du Pape stands out as a non-vintage wine, a unique blend often made up of wines from the last two harvests, complemented by a reserve wine. This practice preserves the house’s unalterable taste signature, integrating the best elements of each year to create a balanced and harmonious wine. Each tasting is an act of devotion, aimed at balancing the subtle nuances and distinctive characteristics of each batch.
