IGP PAYS D'OC

TERROIRS

La Fiole Viognier vines grow in the Gard department, on sandy-clay and clay-limestone soils, typical of this Mediterranean region. These soils offer excellent drainage, which is essential for avoiding excess water, while retaining sufficient moisture during drier periods. The Mediterranean climate, with its hot, dry summers and cool influences from the surrounding hills, particularly the Cévennes climate in some plots, creates the perfect balance for Viognier to ripen. This particular climate, marked by large temperature swings and cooler winds, favours fine, complex aromas. Other plots benefit from more direct exposure to the heat of the Mediterranean sun, bringing richness and roundness to the wine. The average age of
the vines, between 20 and 30 years, guarantees stable, high-quality production, with grapes that are concentrated in flavour. These selected plots reflect a terroir conducive to the production of elegant, well-balanced wines.

The grapes are harvested mechanically at full maturity, when the fruit reaches its peak in terms of aromatic concentration. Harvesting is done at night or early in the morning to keep the berries at a low temperature, limiting oxidation and preserving the freshness of the aromas.

The grapes are gently pressed as soon as they arrive in the cellar to obtain a clear juice rich in aromas. The juice is then cold settled for 24 hours to remove impurities while preserving the aromatic purity. Fermentation takes place in stainless steel or concrete vats, at controlled temperatures of between 16°C and 18°C. This method brings out the full aromatic complexity of Viognier, in particular its characteristic notes of apricot, peach and white flowers.

The wine is aged for several months on fine lees in stainless steel and concrete vats. This process enhances the wine's fullness and roundness on the palate, while preserving its freshness and liveliness. This short ageing period brings out the purity and natural expression of the Viognier grape variety, without masking its aromas with outside influences.

TASTING

This wine has a sumptuous intense golden yellow colour, both brilliant and expressive.

On the nose, a beautiful freshness mingles with a remarkable aromatic intensity. Notes of apricot and peach harmonise with floral nuances of jasmine. With time, this bouquet evolves towards more complex and suave aromas, evoking dried apricot, acacia honey, quince and very ripe peach.

On the palate, the attack is fresh and supple, revealing delicious flavours of apricot and vine peach. With age, the texture becomes richer, giving way to generous notes of dried apricot and honey, which lend beautiful depth and great richness.

Served at 10-12°C, this Viognier is the perfect accompaniment to exotic, slightly spicy dishes, fish in sauce or blue cheese, bringing out its evolving flavours and elegant texture.
